I’m gearing up for a vacation and I’m now thinking about packing/taking some snacks with me since it’s a road trip! Each hotel we are staying at is equipped with a workout facility and a swimming pool so I intend to stay active on this trip and not stick with my plan. I’ll have my mom and niece with me so that will be plenty of moral support and accountability – not to mention my 11 year old niece will want to be active and at the pool every day. That being said – I hope to come back with a bit of a tan, lots of vitamin D soaked up the natural way and be down a couple more pounds.
Tomorrow I’ll be sure to hit the grocery store and stock up on the 100 calorie almond packs, thinkThin bars and some dried fruit. On the road I’ll be sure to grab some bottled water each day and eat as healthy as possible. I can tell you one meal I’m looking forward to in Las Vegas though! It’s at Mon Ami Gabi in the Paris: Seared Sea Scallops with spinach & whipped cauliflower. Doesn’t that sound amazing? I’ll be sure to take a picture of it.
