1 pork tenderloin – trimmed and cut into bite sized chunks

1 tbsp. butter + 1 tbsp. olive oil

1 chopped or sliced large sweet onion

3 apples peeled and chopped into bite size chunks

Apple Butter – No Sugar Added



Put olive oil into large saucepan – add butter and melt it over medium/medium high heat.

Add onions and apples and toss well so the olive oil/butter is coating them.  Leave on medium heat and saute’ until the
onions and apples are carmelized as in above picture.  Then add the pork tenderloin and cook until slightly pink in the center.  At this point add 3-4 heaping tablespoons of apple butter or as much as you want with regards to how much sauce you like.  Stir this all together.  Add a little water (I use about 1/4 cup) to thin the sauce just a bit as my apple butter is really thick.  Then salt and pepper to taste.
